Needless to say, I expect a lot out of my lunches. The only way I can achieve all of these goals is by prepping all of my food on Sundays to give myself a chance to stick with it through the rest of the week. It requires a decent amount of planning at the beginning, as Aaron can attest, but it's sooooo worth it throughout the week!
Lately, I've had a burning desire to eat more salads, because hey, it's good for you, right? I could stand to eat more veggies in my day. However, my limited knowledge of salad making has often led to watery iceberg salads that wilt by the 2nd day that wasn't even that good in the first place. My solemn mission is to try out a plethora of salad recipes for lunch, find and share what I love, and prove to myself that yes, I do like salads! Maybe if I can convince myself about salads, I can move onto liking running next.
Hahahaha. Just kidding. That'll never happen.
This salad has lots of great stars in it: kale (because I'm becoming one of THOSE kale people), broccoli slaw, shredded chicken, dried cranberries, red onion, and roasted sunflower seeds. Hoo yes, this one is a goodie.
I really love this salad because it's a little different than your straight lettuce salad; the slaw mixed with the kale is super hearty and resilient when it comes to sitting in your fridge all week long. No wilting here, thanks! It's also very filling and super fast to throw together. Let's do this!
Yield: 4 servings
1 12 oz. bag broccoli slaw
4 cups chopped kale (I like Tuscan kale because of its great texture. It also makes great kale chips!)
1/4 red onion, diced
1/3 cup dried cranberries
1/3 cup roasted sunflower seeds
1 1/3 cup rotisserie chicken, shredded
In a large bowl, toss together the broccoli slaw, kale, red onions, dried cranberries, sunflower seeds, and shredded chicken. Add a dressing right before serving.
For the dressing,I usually stick with Walden Farms calorie-free dressing, and I loved the Honey Balsamic Vinaigrette. If you're not counting calories, feel free to try Shutterbean's balsamic vinaigrette.
