7 Weeks of Pumpkin

Ever since leaving physical school (in case you hadn’t heard, I’m still taking independent study courses), I’ve found it a little difficult to find the motivation to cook new recipes on a regular basis. It comes from a mixture of laziness/exhaustion from moving and finishing school and not having access to all of my spices and cooking supplies until recently. I also have fallen out of the habit! It’s sad, I know. But enough of that! I have my Kitchen Aid hooked up and raring to go, my spices lined up on my fridge, and all 18 of my cooking pans in my cupboards. It’s time to get back in the swing of things!
I love pumpkin. Love it, love it, love it. I sometimes whine that it’s only appropriate to eat in fall (Who made that rule? Canned pumpkin is available all year long, fool.) so I decided to take full advantage of this season and try out all of the best pumpkin recipes before Aaron gives me grief about it not being the right season. I’m going to try out the full range: bread, cookies, muffins, brownies, donuts, cake, and coffee cake. (OK, that last category is a bit of a stretch, but it just looks so good!)
So here’s the plan: one delicious, pumpkin-filled recipe a week. I’ll get back into cooking shape, and fulfill all of my pumpkin cravings for the next year or so. Let’s look at the spread:

1. This pumpkin bread recipe from Our Best Bites is first on my list this week. I’m a sucker for banana bread, so maybe this can be help me fill the void now that I can’t eat bananas anymore! {See my version here}
2. Aaron and I used to love making pumpkin cookies using spice cake mix, canned pumpkin, and chocolate chips, and I’m hoping that this homemade version from Sally’s Baking Addiction will make a nice replacement.
3. Week 3, I plan on tackling these cupcake/muffins from Sally’s Baking Addiction. I’ll probably skip the frosting and call it a muffin (just like Jim Gaffigan jokes about) and call it breakfast! Cool?
4. Pumpkin brownies from My Baking Addiction (do you like how most of the blogs I follow reference baking as an addiction? Is that unhealthy?) sound like an unstoppable combination.
5. I really need a reason to pull out my donut baking pan again, so thank you Krista and Michele for posting these beauts. I’ve been daydreaming of brown butter ever since I read Joy the Baker’s love letter to it I read this past week. Mm.
6. Bundt cake pans have been on my wishlist forever, so if I put this cake from Averie Cooks on my to-make list, that gives me a reason to buy one? Right, Aaron? Right?
7. Last on the list is this coffee cake from Sally’s Baking Addiction. I’m a sucker for all things crumbly and delicious, so I’m sure it will be a hit.

    I am such a fan of this idea. I was just looking for a good pumpkin bread recipe! I’ll have to try this one out.

    P.S. I noticed that most of these involve pumpkin + chocolate. Such a winning combination :)
